Cilantro is an annual herb native to regions spanning from Southern Europe and Northern Africa to Southwest Asia, and it is critical to cuisines all over the world. It tends to bolt quickly — so use it often — but when it does bolt, the seeds it produces are also of culinary  value as coriander.
